Fatty acid and amino acid profiles in muscle <i>longissimus lumborum et thoracis</i> of the indigenous Prestice Black-Pied pig breed in comparison with a commercial pig hybrid

The objective of the study was to analyse fatty acid profile (FA) and amino (AA) in musculus longissimus lumborum et thoracis (MLLT) two contrast pig populations. carried out on a total 39 pigs (19 barrows 20 gilts) indigenous Prestice Black-Pied Pig (PB) 37 (17 three-breed commercial hybrid Large White × Landrace Whitesireline (CH). were kept same conditions diet management. slaughter at average weight 95 kg. Sex evaluated also taken into account. CH showed lower contents saturated FA (p < 0.01), monounsaturated (MUFA; p 0.05) higher content n-6 polyunsaturated (PUFA; 0.05), more favourable health indexes, expressed as values atherogenic 0.001), thrombogenic 0.001) saturation (saturated/unsaturated FA) index positively hypocholesterolemic/hypercholesterolemic ratio 0.01). gilts MUFA 0.05).
